Commercial-Scale Freeze Drying, Up to 40 lbs. Per Batch

Move from home-size batches to real production with the Blue Alpine XL Commercial Freeze Dryer. Ten 13" × 18" stainless steel trays, a temperature sensor on every shelf, and saved recipes let small food businesses and farms process about 40 lbs. of fresh food in a 24-hour cycle.

More than twice the size of Blue Alpine's Large freeze dryers, the XL Commercial is built for producers who run batch after batch. It comes with a commercial vacuum pump and is available in seven colors.

Key Features at a Glance

  • Commercial Batch Capacity: About 40 lbs. of fresh food, or 5 gallons of liquid, per 24-hour cycle
  • Ten Stainless Steel Trays: Includes ten 13" × 18" trays
  • A Sensor on Every Shelf: All ten shelves have their own temperature sensor for even results on full and partial batches
  • Saved Recipes: Save customizable recipes for repeatable results across different products
  • Adjustable Cycles: Control cycle settings, including pressure, to shorten drying times
  • Powerful Refrigeration: Twice the refrigeration capacity of comparably sized machines, according to Blue Alpine
  • Faster Defrost: Heating elements in the chamber walls speed up defrosting between batches
  • Fresh Air Valve: Provides a sterile air inlet
  • Nitrogen Gas Inlet: Flush the chamber with nitrogen to help preserve food longer
  • Commercial Vacuum Pump Included: Commercial oil vacuum pump comes standard, with a dry screw pump upgrade available
  • Seven Colors: Sky Blue, Midnight Black, Blazing Orange, Alps White, Forest Green, Orchid Lavender, and Tropical Teal
  • 240V Operation: Requires a 30-amp breaker and an L6-30 outlet

What's Included

Your Blue Alpine XL Commercial Freeze Dryer includes the equipment and starter supplies you need to begin production:

  • 1 Blue Alpine XL Commercial Freeze Dryer
  • 1 Commercial Vacuum Pump with oil
  • 1 Fresh Air Valve Assembly
  • 1 Impulse Sealer
  • 10 Stainless Steel Trays — 13" × 18"
  • 10 Silicone Mats
  • 50 Mylar Bags
  • 50 Oxygen Absorbers

Important Electrical Requirements

Please confirm your electrical setup before ordering. The XL Commercial does not run on a standard household outlet. It requires 240V, 60Hz power on a 30-amp breaker with an L6-30 outlet.

An L6-30 is a 30-amp twist-lock outlet. Most homes and many shops will need an electrician to install one before the machine arrives.

Blue Alpine lists energy use at about 72 kWh per full load.

Precision on Every Shelf

Each of the ten shelves has its own temperature sensor, so the machine monitors and controls every tray separately. A full 40 lb. batch dries evenly, and a partial batch runs without any special setup.

You can save customizable recipes to run the same product the same way every time, and adjust cycle settings such as pressure to get the shortest drying time for each product.

Built for Production

Blue Alpine designed the XL Commercial around 24-hour cycles and says it has twice the refrigeration capacity of comparably sized machines. Heating elements in the chamber walls speed up defrosting, so the machine is ready for the next batch sooner. Pre-freezing your food helps keep cycles short.

Run consistently, Blue Alpine says the XL Commercial can produce up to 8,000 lbs. of freeze-dried food per year.

Choose Your Vacuum Pump

The Blue Alpine XL Commercial is available with your choice of vacuum pump.

Commercial Oil Vacuum Pump
The XL Commercial comes standard with a commercial oil vacuum pump, including oil.

Dry Screw Vacuum Pump Upgrade
A dry screw vacuum pump is available as an upgrade for an additional $8,112.

Please note: Service on the dry screw pump is handled directly by the pump's manufacturer.

Planning Your Space

The XL Commercial measures 34.25" L × 31.9" W × 44.75" H and weighs about 300 lbs. without the pump. Blue Alpine calls for at least 1 foot of open space on all sides and a room kept between 32°F and 90°F.

The machine runs at about 70–75 dB, so a workshop, garage, or production room suits it better than a living area. After it's moved into place, let it stand upright for 24 hours before the first run.

Owner's Manual

Blue Alpine XL Commercial Freeze Dryer Owner's Manual

This manual covers Blue Alpine's full freeze dryer line. Its specifications table and electrical instructions are written for the Medium and Large models, so please use the electrical requirements and specifications on this page for the XL Commercial.

Built for Growing Food Businesses

Whether you're scaling up a freeze-dried product line, processing a farm's harvest, or filling larger orders, the Blue Alpine XL Commercial gives you the capacity to treat freeze drying as production instead of a side project.

Its combination of ten trays, a sensor on every shelf, saved recipes, and refrigeration built for 24-hour cycles makes it especially well suited for producers who have outgrown a Large freeze dryer and need real production volume.

FAQ

How is the XL Commercial different from Blue Alpine's Large freeze dryers?

The XL Commercial is more than twice the size of the Large models. It holds ten 13" × 18" trays and about 40 lbs. of fresh food per batch, compared with five trays and up to 25 lbs. on the Large. It also runs on 240V power, where the Large models use 120V.

Which vacuum pump should I choose?

The commercial oil vacuum pump that comes with the XL Commercial is the lower-cost choice. It's included in the price, and its main upkeep is changing the oil at least every 120 hours of use. The dry screw vacuum pump is an upgrade for an additional $8,112. If a dry screw pump needs service, it goes directly to the manufacturer.

Where should I set up my Blue Alpine Freeze Dryer?

Choose a spot with a 240V, 30-amp circuit and an L6-30 outlet, and floor space for a machine about 34" long, 32" wide, and 45" tall. Blue Alpine lists operating noise at about 70 to 75 decibels, so a workshop, garage, or production room suits it better than a living area. The space should be clean, open, and kept between 32°F and 90°F.  Please leave at least 1 foot of open space on all sides of the machine.

What maintenance does the XL Commercial require?

Routine maintenance primarily involves keeping the freeze dryer clean and maintaining the vacuum pump. With the included commercial oil vacuum pump, Blue Alpine calls for changing the pump oil every 4 to 5 loads and at least every 120 hours of use, or sooner if the oil looks milky or discolored. The condenser should be cleaned every six months.

The freeze-drying chamber and shelves should also be cleaned periodically to remove food residue and help keep the machine ready for the next batch.

Blue Alpine provides technical customer support for its freeze dryers, including troubleshooting assistance and guidance if maintenance or repairs are needed.

What warranty comes with a Blue Alpine Freeze Dryer?

Blue Alpine freeze dryers include a 1-year full warranty and a 3-year limited warranty on the sealed refrigeration system.

During the full warranty period, Blue Alpine provides support for covered defects and repairs. The 3-year refrigeration-system warranty covers specified refrigeration components, including the compressor, condenser, evaporator, tubing, and condenser fan, according to Blue Alpine's warranty terms.

Blue Alpine also provides technical customer support and troubleshooting assistance to help diagnose problems and guide customers through repairs when needed.

For complete coverage details, exclusions, and warranty requirements, please see the Blue Alpine Warranty information on this product page.

How is the XL Commercial delivered?

The XL Commercial ships crated by freight. The carrier leaves it at the curb or the nearest accessible point and does not bring it inside. The machine weighs about 300 lbs. without the pump, so plan ahead for equipment or help to move it into place.

What comes with the XL Commercial?

Included with your machine:

  • 1 XL Commercial freeze dryer
  • 1 commercial vacuum pump with oil
  • 1 fresh air valve assembly
  • 1 impulse sealer
  • 10 stainless steel trays, 13" × 18"
  • 10 silicone mats
  • 50 Mylar bags
  • 50 oxygen absorbers
What foods can I freeze dry?

Most foods and prepared meals can be freeze dried, including fruits, vegetables, meats, dairy products, complete meals, and many snacks.

Some foods are not well suited to freeze drying. Blue Alpine specifically notes that very high-fat foods, such as peanut butter, and very high-sugar foods, such as honey, can be difficult or unsuitable to freeze dry. Some particularly fragile foods may also require special techniques.

For food safety, remember that freeze drying preserves food but does not cook it or eliminate all bacteria. Raw meats and eggs should be cooked appropriately before eating, and all freeze-dried foods should be packaged and stored properly.

How does freeze drying work?

Freeze drying removes moisture from food through a process called sublimation. The food is first frozen, then the freeze dryer creates a vacuum that allows frozen water in the food to transition from ice into vapor without first becoming liquid.

The process generally takes place in three stages: freezing, primary drying, and secondary drying. Together, these stages remove moisture while preserving the food for storage.

When you're ready to use freeze-dried food, many foods can be eaten dry or rehydrated by adding water, depending on the food and how you plan to use it.

How long can freeze-dried food last?

When properly packaged and stored, freeze-dried food can maintain its quality and freshness for 25 years or longer, according to Blue Alpine.

Long-term shelf life depends on proper storage. Blue Alpine recommends using an appropriate storage method such as high-quality Mylar bags, and foods should be properly sealed and stored under suitable conditions.

How much food can the XL Commercial process at once?

It handles about 40 lbs. of fresh food, or 5 gallons of liquid, per batch on ten 13" × 18" trays. Blue Alpine designed it around 24-hour cycles, and pre-freezing your food helps keep cycles short.

Can I run a partial batch?

Yes. Each of the ten trays has its own temperature sensor, so the machine controls each shelf separately whether it's full or not.

What electrical setup does the XL Commercial require?

It requires 240V, 60Hz power on a 30-amp breaker with an L6-30 outlet. This is not a standard household outlet, so have an electrician confirm your setup before ordering. Blue Alpine lists energy use at about 72 kWh per full load.

How big and heavy is the XL Commercial?

It measures 34.25" L × 31.9" W × 44.75" H and weighs about 300 lbs. without the pump. Measure your doorways and the path to where it will sit.
